Really appreciate the recipe confirmations. For anyone seeking still further verification, I just tried the recipe as instructed here and it works. The procedure ate the misplaced gem of course, but that was a price I paid gladly to have my IK helm sockets free again. Thanks for the info everyone (and to Blizzard for creating a handy 'undo. This means for example if you have a belt with required level 20, add five orbs (level penalty +20) and socket a Rha rune (required level 100), you get a belt with required level 100+20 = 120. For that reason, to avoid going over required level 140 on accident, always add the socket fillers before adding orbs. 1 Hel Rune + Scroll of Town Portal + Any Socketed Item – Remove items from sockets. Removes the jewels, gems, or runes from the sockets in an item. The items in the sockets are destroyed, and all bonuses granted by those items are removed. Based on this formula page you may use the Horodric Cube recipe of combining your socketed item with 1 Hel Rune and 1 Scroll of Town Portal to destroy the gems inside and leave fresh sockets. The Cube also replaces the Jeweler's gem combining function: combining three gems of the same type and quality (other than Perfect) promotes it one level.
I don't know if you're joking or not but.that cube recipe removes whatever jewel/gem/rune is in the socket of the weapon/armor. It doesn't remove the actual open sockets from an item. That's not possible.
